Polyphenols are natural antioxidant compounds found in olives. In EVOO, they are often associated with freshness and a peppery sensation (oleocanthal). More polyphenols mean more of these compounds per shot.
Oil always contains calories. A more concentrated EVOO provides more polyphenols without requiring more oil—you get more "good stuff" per calorie.

Polyphenols break down as soon as the oil oxidizes—due to light and oxygen. That is why we store the oil in Puglia in airtight, refrigerated conditions and ship it fresh every month in small, dark glass bottles. This ensures it sits for as little time as possible and stays fresh longer.

Yes – but Solio is primarily an EVOO supplement for your daily routine. If you use it when cooking, it is best to do so gently (e.g., adding it to warm dishes, not "frying it to death"). For high-heat searing, use your preferred cooking fat – and use Solio instead as a daily spoonful/shot or as a ritual with your meals.
