Dark, cool, tightly sealed. That solves 90% of problems. These three principles are not complicated, but they are crucial for the longevity and quality of your EVOO.
- Do not store next to the stove.
- Do not store on the windowsill.
- Do not leave it open.
You can recognize quality by the smell/taste: fruity, fresh, vibrant vs. rancid, flat, oily. Your senses are often more reliable than the best-before date on the bottle.
These three rules sound simple, but following them makes the difference between an oil that still tastes excellent after 3 months and one that has significantly degraded after just 4 weeks.

Rule 1: Store in the dark
Light, especially UV light, is one of the main enemies of EVOO. It catalyzes photo-oxidation, a process in which light creates free radicals that attack unsaturated fatty acids and polyphenols.
Ideal: Cupboard, pantry, dark larder. If you want to keep the oil on the countertop (for daily use), place it in a corner without direct sunlight.
Avoid: Windowsills, open shelves with bright lighting, direct sunlight. Even indirect daylight over several weeks can cause measurable loss of quality.
For frequent users: A small pouring bottle (100–200 ml) on the countertop, which is refilled weekly, is a good compromise. The main bottle remains in the dark cupboard.
Rule 2: Store in a cool place
Temperature exponentially affects the speed of chemical reactions. As a rule of thumb: for every 10°C (18°F) rise in temperature, the reaction rate doubles (Arrhenius equation).
Ideal: 15–20°C (60–68°F, normal room temperature in cool rooms). The refrigerator is possible (4–8°C / 39–46°F) but not necessary. EVOO may become solid or cloudy when refrigerated – this is reversible and does not indicate a loss of quality.
Avoid: Above/next to the stove, near radiators, in hot summer kitchens without air conditioning. Temperatures above 25°C (77°F) noticeably accelerate oxidation.
In very warm climates, temporary refrigerated storage can be useful. Simply let the oil stand at room temperature for 30 minutes before use.

Rule 3: Seal tightly
Oxygen is the third main enemy. Autoxidation – the direct reaction of oxygen with fatty acids – occurs continuously as soon as the oil is exposed to air.
Ideal: Seal immediately after every use. Screw the cap on tightly.
Avoid: Leaving the bottle open, a loose cap, a damaged cork/closure.
Additional tip: For very slow usage, it can help to transfer the oil into a smaller bottle to minimize the headspace (air space).
An advanced trick: Some connoisseurs use wine pumps with stoppers to remove air from opened bottles.

How do I know if the oil is still good?
- Smell test: Fresh EVOO smells fruity, grassy, vibrant. Rancid oil smells like old nuts, cardboard, or crayons.
- Taste test: Fresh EVOO tastes fruity, perhaps bitter/peppery. Rancid oil tastes flat, oily, unpleasant.
- Visual check: EVOO can be naturally cloudy – this is not a problem. Unusual colors (very pale, grayish) can indicate problems.
The best-before date is a guideline, not an expiration date. A well-stored oil can still be good after its best-before date. A poorly stored oil can turn rancid before its best-before date.
The best test is always the taste: If it tastes good (fruity, vibrant), it is good.

Do I need to refrigerate it?
Not necessarily. Dark/cool in the cupboard is usually enough. The refrigerator is okay, but it makes the oil solid (reversible).
What exactly does "rancid" mean?
A smell like cardboard/old nuts/crayons, flat taste. Oxidation has altered the fat structure.
Can I cook with it?
